The Best Vanilla Cake

Ingredients

90g Soft Butter

240g Plain Flour

2 tsp Baking Powder

10g Corn Flour

1 tsp Milk Powder

250g Caster Sugar

2 Large Eggs

230g Whole Milk

1 ½ tsp Vanilla Extract

1 tbsp Golden Syrup

Method

Add the room temperature butter ( cut the butter into cubes), flour, corn flour, baking powder and milk powder to stand mixer with a paddle on and mix to a breadcrumb consistency.

Mix in the sugar.

Add the eggs, milk, vanilla, and golden syrup in a small bowl and stir them together. Now add this to the mixer in 3 stages, so it fully incorporates. Ensure the mixer is on low and you only mix for 20 seconds between stages. Give a good scrape down.

Turn the mixer up to medium and beat again until the batter is smooth, but don’t over mix.

Transfer into 3 x 6-inch pans greased and lined at the base and bake on the middle shelf at 160C Fan/180C/350F/Gas 4 for 30 to 35 minutes or until a toothpick comes out clean. Decorate with Connors Buttercream Silk
